Berrylicious breakfast bowls + Cacao-Goji "gran-uesli"

I wasn’t thinking about posting the recipe for a morning smoothie bowl before one of my friends came to me saying that she had searched it from my blog. Smoothie bowls are just sososo good…you can blend pretty much everything into your smoothie bowl depending on your tastes – I will give you an idea for two of my favourite brekky bowls, Banana-Blackcurrant-Blueberry-Açai (Purple) and Banana-Redcurrant-Strawberry-Maca (Pink). Both bowls have a crispy not too sweet taste thanks to the currants so if you think they are too “crisp” just substitute some of the currants in my recipe with more strawbies or bluebies. But, I strongly suggest you to try first with these amounts: de-li-ci-ous.

This is seriously like the quickest and simplest and yet so tasty breakfast bursting with all the berries. Just blend your “smoothie”, top with your favorite toppings like muesli, nuts, seeds, more berries etc. Perfect for a summery morning!

P.S. I’ll give you an idea for a muesli as well, don’t worry!

Berry Purple brekky bowl (Banana-Blackcurrant-Blueberry-Açaí)

What you will need:

1 big banana

1dl frozen blackcurrants

1/2dl frozen/fresh blueberries

1,5dl natural (organic) yogurt (or unflavoured dairy free yogurt)

1tsp açaí powder

Berry Pink brekky bowl (Banana-Redcurrant-Strawberry-Maca)

What you will need:

1 big banana

1dl frozen redcurrants

1/2 dl frozen/fresh strawberries

1,5dl natural (organic) yogurt (or unflavoured dairy free yogurt)

1tsp maca powder

Preferred toppings:

berries, banana, muesli, seeds


How to do it?

  • Simply process all your ingredients in your smoothie machine or with a stick blender until smooth. You can leave some banana for toppings/decoration.
  • Top with more berries, muesli, seeds or whatever you like and enjoy!

So here is one of my favourite muesli toppings for the brekky bowls. It’s not completely a granola, but not completely a muesli either because some ingredients are raw while others are toasted so let’s just call it “gran-uesli”.

Cacao-Goji “gran-uesli”

What you will need:

Toasted:

1dl raw buckwheat groats

1dl rye flakes

1dl spelt flakes

1tbsp raw cacao powder

1tbsp coconut oil

“Raw”:

2dl oat flakes (“rolled oats”)

1dl almonds

1/2dl flaxseed

1/2dl pepitas (pumpkin seeds)

1/2dl dried cranberries (I use sugar-free, sweetened with apple extract)

1/2dl goji berries

1/2dl raw cacao nibs

How to do it?

  • Pre-heat your oven to 170c.
  • Mix together rinsed buckwheat, rye, spelt and cacao powder. Then blend in also the melted coconut oil and pour the mixture on a baking tray on top of parchment paper. Cook in the oven for about 25 minutes, stirring every once in a while. Watch our for not burning!
  • In the meanwhile, mix all your remaining ingredients in a big bowl.
  • When your toasted muesli is ready, let it cool down and then combine with the raw ingredients.
  • Store in an airtight jar and enjoy with for example with soygurt of on top of berrylicious brekky bowls!

    not sure how the ingredients are measured – eg. 1dl? Is this like 1 cup? What measure is “dl”?
