Favourite brekky bowls continued: colour blue

My breakfast smoothie bowls normally consist of banana, unflavoured organic soygurt (soy yogurt) or natural organic yogurt, some other fuit or berries and always a superfood booster. No need to mention that I just love these rainbow coloured breakfasts – they are simple, quick, nourishing and bursting with flavour – perfect on these hot summer days! I have already introduced you a Berry Purple brekky bowl (banana/blackcurrant/blueberry/açaí) and a Berry Pink brekky bowl (banana/redcurrant/strawberry/maca) – so what next? Of course my favourite colour blue, which is maybe not the most common breakfast colour, but trust me, this certainly tastes delicious. Now you’re probably wondering how to create a blue coloured smoothie, but the answer really is simply spirulina powder.

Spirulina is a blue green algae that contains a lot of protein and vitamins such as vitamin B and beta-carotene + minerals such as phosphore, magnesium, iron, calium, zinc and manganese. Sprirulina totally gives you the much needed morning energy boost and although it smells horrible, I promise you that it won’t taste through  – so just go ahead and add it to give an extra kick to your breakfast (and the beautiful colour).

Fruity Blue brekky bowl (Banana-Plum-Currant-Spirulina)

What you will need:

1 big banana

3 small frozen yellow plums

1/2dl fresh/frozen green or white currants

1,5dl natural (organic) yogurt (or unflavoured dairy free yogurt)

1tsp spirulina powder

Preferred toppings:

berries, banana, muesli

How to do it?

  • The night before, remove the seeds from your plums, chop them and freeze them overnight.
  • In the morning, simply process all your ingredients in your smoothie machine or with a stick blender until smooth. You can leave some banana for toppings/decoration.
  • Top with more berries, muesli, seeds or whatever you like and enjoy!
