Favourite brekky bowls with seasonal ingredients

I’m incorporating beetroot into everything at the moment. Not only because beetroot is delicious, pretty coloured and healthy, but also because it’s in season and the young beetroots available at the store at the moment are just amazing. Beetroot is good for you because it contains a variety of minerals: potassium, calcium, magnesium, natrium, iron, copper and zinc. It also provides you with antioxidants as well as vitamins A, E, C and B and according to various research studies, is said to even lower blood pressure. Besides, the tryptophan in beetroot (an amino acid) makes you happy!

Can you already guess what I’m using beetroot with this time…?

Shock pink beet brekky bowl (Banana-Blackcurrant-Beetroot-Açaí)

What you will need:

1 big banana

1dl frozen blackcurrants

1 small to medium cooked and chilled beetroot

1,5dl natural (organic) yogurt (or unflavoured dairy free yogurt)

1tsp açaí powder

Preferred toppings:

berries, nana, muesli

How to do it?

  • Simply process all your ingredients in your smoothie machine or with a stick blender until smooth. You can leave some banana for toppings/decoration.
  • Top with more berries, muesli, seeds or whatever you like and enjoy! Psst. you might also want to enjoy you brekky bowl topped with a raw powerbar
