The ultimate overnight breakfast parfait

I just realized that I haven’t posted a recipe for an “overnight breakfast” in a while. These kind of make-ahead breakfasts are perfect for early mornings when you want to maximize sleep time instead of dedicating those extra ten, fifteen minutes for preparing your breakfast. Even better, if you prepare your “overnight breakfast” in a jar, you can easily take it with you to work, university or wherever you intend to leave in the morning. So yesterday, I thought I’d prepare myself one of these jars of goodness to enjoy this morning, without any hurry. I also decided to make everything a bit more fun and a lot more delicious by creating different layers; one overnight oat layer, one chia pudding layer, one layer with pure apple purée and one with my favourite berries of the moment. The variations of this breakfast are almost limitless when you just keep the liquid/chia seed/dry ingredient ratio the same, so feel free to give the recipe a little twist by trying different berry powders, plant milks and fruit purées for example!

The ultimate overnight breakfast parfait

What you will need:

Cranberry cinnamon overnight oats layer:

1dl oats

1tbsp chia seeds

1tbsp dried cranberries (mine are sugar free, sweetened with apple juice)

1tsp cinnamon

1dl natural (organic) yogurt

1,5dl oat milk

Berry chia layer:

1tbsp chia seeds

1tsp berry powder (I used Raw Mountain Beauty Berries blend)

0,5dl oat milk

Fruit layer:

1-3tbsp 100% pure applesauce (mine is homemade, sugar free)

Preferred toppings:

more berries, coconut chips

How to do it?

  • Overnight oats layer: In a glass jar, mix your dry ingredients together. Separately, mix your liquids. Then, mix everything together, stir, and let sit in the fridge for at least 2 hours or overnight.
  • Berry chia layer: In another glass jar, mix your chia seeds & berry powder. Pour in the liquid. Stir & let sit in the fridge for at least 2 hours or overnight.
  • Once your layers are ready, give them one more stir, then arrange them in a jar, one by one, starting wit the most solid one. You can do this step either in the morning or right after your different layers have become thick enough. You can even add an extra layer of berries like I did. Get creative!
